Okay so the other day I overheard a few ladies at work talking about the best way to make the most divine chocolate mud cake. The thing that got my attention wasn't the descriptions of how it melts in your mouth or the fact that after the first bite your whole life suddenly feels perfect. No, it was the mention of broccoli being added to the cake.
I know right, BROCCOLI IN MUD CAKE!? What the!?
Apparently, if you boil up about a cup of broccoli or cauliflower, then mush it up or put it into a blender, and mix it through the cake batter- it will make the most amazing moist cake. And because of all the chocolate flavour, you can't even tell the vegies are in there. Hmm... does that mean I wont feel so guilty about having that extra peice of cake for dessert? Count me in! ;)

What an awesome idea. Since broccoli and cauliflower are relatively sweet anyway, I think this would work really well. We all know that carrot cake works well, which would prove the concept of veggies working with sweet cake. Broccoli is subtle enough that I think a chocolate cake full of it just might be delicious! Thanks for sharing such an ingenious concept.
