The new up and coming gourmet food: snail caviar

Humans have been eating snails ever since the Stone Age. The most common dish is the French escargot: snails are purged, boiled in chicken stock and then served in parsley or garlic butter.
However, there is now a new snail food to look for during your next trip to France: snail caviar. Snail eggs are collected, cleaned and preserved just like fish eggs; with the only difference being their origin.
If you want to give it a go, get your credit card ready. Snail caviar is quite expensive.
