Do you love Italian greens when you go out to eat but cannot quite figure out how to cook down the greens so they are not bitter? Well a quick and easy Italian greens recipe using spinach can give you as much flavor and more, as the long version. Saute spinach with garlic in olive oil until the spinach is wilted add some chicken stock, just enough to cover the bottom of the pan, add cracked pepper, salt, and finish it off with Parmesan cheese. Serve it as a side dish or as a bed for grilled chicken and enjoy!
