Ina Garten is really something - here she shows us how to make a delicious frittata that will feed six to eight people, and she makes it in less than 3 minutes! When I make frittatas, I like to add just one or more eggs and omit some of the yolks just to stay light on the cholesterol. Another "lighter" substitution would be to use lowfat milk instead of cream. I make them all the time, sometimes even for dinner, and the low fat way is just as tasty.
