At school we were all taught about the four basic tastes: sweet, salty, sour and bitter. But there is a fifth one: umami or savory.
Back in 1907 Kikunae Ikeda discovered this fifth taste. Then, why is it that most of us have never heard of it if it has been around for over a century?
Truth is, we have. The same way sugar is the best example of sweet, and salt of salty, umami is best represented by MSG.
