Braised Red Cabbage

Braised red cabbage is one of the oldest cabbage preparations. The sweet and sour flavor
of this dish has delighted many people and the classical preparation can be enjoyed in your home with pork, beef, chicken, or fish making it an all around favorite.


-½ pound of chopped bacon strips
-4 tbs. Butter
-1 medium sized red cabbage, sliced into 2 inch strips
-4 green granny smith apples, peeled, cored, and sliced in thin french fry strips
-¼ cup of apple cider vinegar
-¼ cup of granulated sugar
-¼ cup of water
-one pinch of salt and pepper

-In a deep heavy bottomed sauce pot, cook bacon on a medium high heat until crisp, then remove from pan

-Add butter and cabbage and cook for 15 minutes stirring often.

-Add apples, vinegar, sugar, water, salt and pepper lower heat, then cover tightly.

-Simmer on low for 45 minutes to an hour, check after 30 minutes to make sure liquid had not evaporated

-Add bacon before serving, cabbage should be tender and juicy.
