Fish Burger Sandwiches

Many people practice the Lenten observance of a meatless Friday meal. Fried fish is not the only way to enjoy a “Fish Friday” try out this great fish burger recipe.

Ingredients: 

2 pounds of fresh or frozen thawed cod
2 eggs
2 Tbl Whole grain mustard
½ tsp salt
¼ tsp pepper
½ tsp lemon juice
¼ cup chopped fresh parsley
½ cup chopped red bell peppers (fine)
2 cups panko bread crumbs

Instructions: 

-Pat fish with paper towel to remove any excess liquid.
-Using food processor grind the fish until it is chunky.
-Add eggs, mustard, salt, pepper, and lemon juice and pulse until the eggs are blended into the mixture pour
this mixture into a bowl.
-Add parsley, red peppers, and bread crumbs to the mixture and mix by hand.
-Form into patties and pan fry or broil until internal temperature of 165*
-Serve with Italian hard rolls with loose leaf lettuce and Roma tomatoes.
