Garlic Chicken

This is a catering favorite of ours and many of our clients enjoy the garlic flavor with the fresh tomato relish. The chicken will melt in your mouth.


-6 Boneless skinless chicken breasts
-2 Cups of flour
-2 Tablespoons of granulated garlic
-½ Teaspoon of salt
-1 Teaspoon of cracked black pepper
-2 Tablespoons dry parsley
-Vegetable Oil
-White cooking wine, or Chablis

Tomato Relish Topping

-12 large Roma Tomatoes, diced
-¼ cup olive oil
-2 cloves fresh minced garlic
-¼ cup chopped fresh basil
-¼ cup chopped fresh parsley
-1 pinch of kosher salt and cracked black pepper

Tomato Relish

-Put all the ingredients for the tomato relish in a glass bowl and toss then set on the side while you cook the chicken, mix occasionally to allow the flavors to blend. This will be used at the end to top the chicken.


-The chicken is cooked using a sear and bake method, so you will need a small cake pan or corning ware dish to layer chicken only slightly overlapping after you brown it in a skillet.

-In a flat shallow dish, mix the flour and all the dry ingredients together
-Heat your non-stick skillet on a medium high heat.
-Add enough oil to cover the bottom of the pan
-Dip the chicken in the flour mixture and brown on both sides, you may need to add a little more oil as it cooks, but not too much.
-Place the browned chicken in baking dish and add enough wine to come up ½ inch on the side of the baking dish.
-Cover and bake for 20-30 minutes or until the internal temperature reaches 165º then remove from oven.

Serve with tomato relish spooned over the top of the chicken and enjoy!
