Grilled Zucchini Pepper Salad

Now that the weather is shaping up for us, we can get grilling. This is a tasty and healthy side dish to go with those steaks!

Ingredients: 

1 1/2 pounds zucchini cut lengthwise into 1/4 in thick slices
2 red bell peppers quartered
1/4 cup extra virgin olive oil divided
2 TBSP balsamic vinegar
2 TSP packed light brown sugar
2 TBSP choppped basil

Instructions: 

1) Prepare grill for direct heat cooking over medium-hot charcoal.
2) Toss vegetables with 2 TBSP oil, 1/2 TSP salt and 1/4 TSP pepper. Grill, turning occasionally until tender, 6-8 minutes total. Transfer peppers to a bowl and let stand, covered, about 10 minutes. Peel peppers and cut into 1 inch pieces.
3) Whisk together vinegar, brown sugar, 1/4 TSP salt, 1/8 TSP pepper, and remaining 2 TBSP oil in a large bowl. Stir in vegetables and basil. Let stand at least 15 minutes for flavors to blend.
