Italian Scramble

The Italian Scramble is one of my mother’s favorite dishes that has changed a bit with my finishing touches through the years. This is a great dish for breakfast, but Mary Lou loved serving this for dinner. This will serve 10-12 pp.


-1 Pound of Hot Sausage, bulk
-1 Medium sized zucchini cut into 1-inch cubes
-1 1 small onion cut into 1-inch cubes
-1 cup of shredded carrots
-1 green bell peppers cut into 1-inch cubes
-1 red bell peppers cut into 1-inch cubes
-2 cloves of garlic
-3 russet potatoes cut into 1-inch cubes and boiled tender
-6 large eggs
-½ cup chopped fresh basil
-½ cup chopped fresh parsley
-1 teaspoon chopped fresh thyme
-1 cup Romano cheese
-8 oz. Shredded mozzarella cheese

-You need a large skillet or you can use a sauce pot for this meal.
-Brown off sausage in the skillet and remove from skillet with slotted spoon.
-Add zucchini, carrots, onions, peppers, and garlic to pan and cook until the zucchini is browned stirring constantly.
-Add potatoes, sausage and herbs cook for 10 more minutes stirring constantly
-Whisk the eggs in a bowl and pour into the pot stir and cook until loose but not dry
-Remove from heat and add both cheese stir and serve.

Adding Italian hot peppers for those who enjoy that spice for life is encouraged!
