A few days ago I posted an article about Jian Bing, or Chinese crepes. Here is the recipe if you can't afford a trip to Beijing.
This recipe is for one large crepe.
Chilli sauce:
1 teaspoon water
1 teaspoon chilli pepper sauce
Crepe:
1 tablespoon millet or soy flour
1 tablespoon white flour
1 tablespoon soy milk
1 tablespoon water
½ teaspoon vegetable oil
1 egg
½ green onion or 1 scallion, chopped
1 tablespoon cilantro, chopped
For the chilli sauce mix the water and the chilli pepper sauce.
For the batter, mix the flours, the soy milk, the water and the vegetable oil.
Spread thinly in a crepe pan and cook for 1 or 2 minutes, until the sides are done.
Add one egg and spread.
Immediately sprinkle with the green onion or scallions and the cilantro
Flip and add the chilli sauce.
Serve hot.
