The Love of Flank Steak

I love flank steak, knowing how to prepare it is the key. Many people think of it as a tough piece of meat, but with the right ingredients it makes a wonderful and tasty dish.


1 pound lean flank steak (trim off all fat)
8 oz bottled Italian dressing
1 Tbl ground cumin
1 tsp chili powder
1 Tbl fresh minced garlic
½ cup chopped fresh cilantro
8 ounces medium salsa
1 cup frozen corn (thawed out)
1 can black beans (rinsed well)

Mexican Flank Steak

Cut all fat from flank steak
In a bowl mix Italian dressing, dry spices, cilantro, minced garlic and ½ of the salsa
Pour into a plastic bag and put steak into the bag.
Squeeze out the air, and place in refrigerator for 4 hours or longer this will tenderize the steak.
Mix the salsa corn and black beans and place in refrigerator until later.

Preheat oven, or you can use outdoors grill or Foreman-type grill. If you use the oven
Place on broiler rack and broil for approximately 15 minutes turning once until an internal temperature of 145* for medium done steak.
If you grill on electric or outdoors, this should take about the same amount of time.
When steak is done place on cutting board (at least 15 minutes) and let it rest until you sauté the corn and black bean salsa mixture.
Slice the steak on a bias, or on an angle, fan out on your platter and top with black bean corn salsa.
