I love using Mango Salsa on Caribbean foods. You can find Caribbean spices in your supermarket now and that can make it easy to cook authentic flavored Island Food. One of my favorites is a Caribbean sandwich with Mango Salsa. Purchase a hard crusted French baguette and some spring mix for this sandwich. Cook strips of chicken or beef that is liberally seasoned Caribbean spices. Split the baguette down the middle, fill with a good amount of spring mix, the chicken, and then top it with Mango Salsa.
-½ Fresh mango small dice ¼ in cubes
-1 Large red bell pepper small dice
-1 Medium green bell pepper small dice
-½ Cup fresh chopped cilantro
-2 Cups of apricot juice
-1 Tbl Kosher salt
-Place mango, bell peppers, cilantro, salt the and apricot juice into a bowl and stir
-Allow to marinate for 1 hour
-Use for sandwiches, as a topping, or a dip for blue corn chips
-Can hold in the refrigerator for 3-4 days
