Pasta Primavera

From the New & Healthy Brand Name Cookbook, a super healthy version of creamy Pasta Primavera. Bon Appetit!

Ingredients: 

1 lb fresh asparagus, cut into 1-inch pieces
2 cups fresh broccoli flowerrettes
1/2 lb fresh mushrooms, cut in half
1/2 cup red pepper strips
2 TBS chopped fresh chives
coarsely ground black pepper
1 cup non-fat sour cream
1/2 cup shredded carrot
1 8 oz package fat free shredded cheddar cheese
12 oz linguine, fettucine, or spaghetti

Instructions: 

Steam asparagus, broccoli, mushrooms and pepper until crisp-tender. Toss with chives; season to taste with pepper. Combine sour cream, carrot and half of cheese. Toss with cooked pasta; arrange on serving platter. Top with vegetable mixture; sprinkle with remaining cheese.
