Salmon Dill Filets

Salmon is one of the largest selling fish in the United States. The Omega 3 fatty acid that salmon contains has been linked to help in prevention of heart disease, inflammation and a multitude of other ailments. Although there have been studies about farm raised fish vs. wild salmon and children. There are some concerns about serving farm-raised salmon to children and possible memory loss and behavior changes occurring. There is however, no problems found with wild salmon consumption with children.

Ingredients: 

-4 Salmon Filets
-½ cup seasoned flour (salt, pepper, and paprika)
-1 Tbl olive oil
-2 Tbl fresh dill
-2 Tbl chopped shallots
-1 Cup of white wine
-1 fresh lemon sliced into rounds

Instructions: 

-Heat non-stick skillet on a medium heat
-Dip the fish in the flour mixture
-Brown the fish on both sides and top with lemon slices
-Place the dill and shallots in the pan then add white wine
-Cover and cook for 10-15 minutes until fish lightly flakes to touch or 165° internal temperature
