A spicy, fresh salsa with a "bite" - uña means "fingernail" in Spanish. This is very similar to many American salsa recipes, but there are a few differences.
2 to 3 roma tomatoes, seeded and chopped
1/3 C finely diced yellow onion
1 green onion, chopped finely
3 serrano chiles, finely chopped
1 clove garlic, minced
1/2 C chopped fresh cilantro
1 tsp lime juice
Seed the tomatoes, reserve juice for other recipes if desired. Chop the tomatoes, yellow onion, green onion, serrano chiles and cilantro. Put into a glass, ceramic or plastic bowl. Add the garlic and lime lemon juice (about 1 small lime or 1/2 lemon, squeezed). Mix thoroughly, chill in refrigerator for at least one hour and serve with chips. Also excellent over eggs or in other recipes. This can also be a "base" for guacamole. Just add to mashed avocados to taste.
For Salsa el Bebé (for babies and white people), reduce chiles, or use 1/2 jalapeno, making sure it has no seeds.
