Skillet Chops & Rice

The rice in this main dish is really optional. If you prefer to just have the pork chops as a stand alone main portion, you would just omit the rice and serve after browning.


4 loin or rib pork chops 1" thick
1 TBSP oil
salt, pepper, garlic
1 cup hot water
1 cup uncooked rice
1 can beef broth or onion soup


Brush chops with oil and brown in skillet for 8-10 minutes on each side. Pour off all but 1 TBSP drippings. Salt and pepper to taste. Put rice on top of chops and add the broth and water. Simmer covered for 50-60 minutes.
