Sun-dried Tomato Feta Burgers

The flavors of sun-dried tomatoes, feta cheese, and fresh herbs make a great burger for the grilling season that is right around the corner.

Ingredients: 

2 pounds ground chuck
1 cup very thinly sliced sun-dried tomatoes (marinated in oil)
¼ cup fresh basil, chopped fine
1 Tbl fresh parsley, chopped fine
2 sprigs fresh thyme, chopped fine
1 Tbl fresh minced garlic
1 tsp salt
1 tsp pepper
½ tsp cayenne pepper
2 fresh large eggs
2 green onions, thin sliced (white and green parts)
1 cup feta cheese crumbles
1 cup panko breadcrumbs

Instructions: 

Chop all herbs and place in bowl with ground beef and all ingredients up to eggs, place eggs in a side bowl and whisk lightly. Mix ingredients with your hands until everything is well distributed. Add onions, feta cheese, and breadcrumbs and mix again until meat will form patties and stick together. You may have to add a little more bread crumbs if needed. Form patties and refrigerate for 30 minutes. Get your grill hot and ready for grilling. Choose a nice hard roll for your burgers and serve with baby spinach and sliced cucumbers.
