This is one of the fastest dishes I've ever made - I once got it down to 16 minutes, from start to finish - but I'm slow, so I'm sure that's no record. This is a great way to dress up a rather nondescript fish such as Tilapia. Maintain your budget too!
4 Six ounce tilapia fillets
1 oz. shallots
2 oz. capers
1 TBSP fresh basil, chopped
2 oz chopped tomatoes
3 oz sauvignon blanc
1 wedge lemon juice
1 wedge lime juic
3 oz. unsalted butter
salt & pepper
Fill a shallow dish with flour and season with salt & pepper. Dust the fish in the flour. Heat a large skillet on med-high heat and saute the shallots, capers, basil, tomatoes until shallots are tender, about 4-5 minutes. Add the sauvignon blanc and the tilapia, saute the tilapia about 2 minutes on each side, add lemon and lime juice, reduce heat and cook for 1 minute more, add butter. Cover and cook additional 4-5 minutes.
