National Paella Day is Approaching

National Paella day is celebrated in late March. This Spanish rice dish originated from Spain.


2 cloves chopped garlic
2 Tbl olive oil
1 pound of bulk hot sausage (sweet sausage can be used)
1 pound of diced chicken, cut into 1-inch pieces


The Easiest Chocolate Mousse Ever

The key to this recipe being so easy is that you just whip the chocolate and egg together in a blender, you're not standing there beating egg whites into peaks.


6 oz good-quality semisweet chocolate (such as Valrhona), chopped, plus extra for shavings (optional)
1 cup milk (any fat content)
2 TBSP brewed espresso

Grilled Tuna with Provencal Vegetables and Easy Aioli

Serve up some grilled bread to accompany this dish and you'll have a complete meal. If you use domestic tuna, you can keep the mercury to a minimum.


Nonstick vegetable oil spray
4 5 oz albacore tuna steaks (from the U.S. or Canada, about 1 inch thick)
2 zucchini, quartered lengthwise


Garlic Chicken

This is a catering favorite of ours and many of our clients enjoy the garlic flavor with the fresh tomato relish. The chicken will melt in your mouth.


-6 Boneless skinless chicken breasts
-2 Cups of flour
-2 Tablespoons of granulated garlic
-½ Teaspoon of salt
-1 Teaspoon of cracked black pepper

Snow Peas with Toasted Almonds

1 TBSP unsalted butter
1/4 cup sliced almonds
1/2 pound snow peas, trimmed
2 TSP minced shallot
1 TSP fresh lemon juice

Artichokes with Bagna Cauda

Bagna Cauda is a warm, garlicky dip traditionally served with raw vegetables. In this version, the sauce is served with cooked artichokes. Bon Appetite!


3 heads of garlic, cloves separated, papery skin removed (but cloves left unpeeled)
