White Chili Soup

As we close in on Winter and begin to welcome Spring, this is one of those cozy warm winter night dishes. Depending on your dinner crowd, you'll probably have enough left over for lunch the next day.

Ingredients: 

Three 15- 1/2 oz cans of Great Northern, Pinto, or Canellini Beans, rinsed and drained.
2 1/2 cups chopped cooked chicken
1 cup chopped onion (1 large)

Pasta Carbonara

Pot Roast with Gravy and Vegetables

As homage to Mable Hoffman, this is a great recipe for the crock pot so you can just "fix it and forget it".

Ingredients: 

3 - 4 lb bottom round, rump, or arm roast, cut in half
2 - 3 tsp salt
1/2 tsp black pepper
2 TBSP all purpose flour

Sun-dried Tomato Feta Burgers

The flavors of sun-dried tomatoes, feta cheese, and fresh herbs make a great burger for the grilling season that is right around the corner.

Ingredients: 

2 pounds ground chuck
1 cup very thinly sliced sun-dried tomatoes (marinated in oil)
¼ cup fresh basil, chopped fine
1 Tbl fresh parsley, chopped fine
