Grilled Tuna with Provencal Vegetables and Easy Aioli

Broccoli Sauteed in Wine and Garlic

Broccoli is one of the best vegetables out there because it is so versatile it will match well with almost any main dish. It's filling enough to have as a meal too if you dare.

Ingredients: 

6 TBSP extra-virgin olive oil
4 cloves garlic, thinly sliced
3 pounds broccoli, cut into spears
1 cup Frascati or other dry white wine
1 TBSP hot red pepper flakes

This dish gives a whole new meaning to "eating your veggies". It is as hearty as any meat dish out there. I usually serve it with couscous or white rice.

1 large eggplant, diced
10 super ripe tomatoes
1 large onion, sliced
2 green peppers, seeded & sliced
